Classic Blueberry Muffins

IMG_5557Ah muffins. So comforting and cozy. My last few baking attempts have been big fails so I thought I'd stick to something easy this weekend and muffins sounded perfect. I mean, how can you screw up muffins, right? Anyway these turned out great and maybe you should make some this weekend too. If you're a healthy kind of person, you can eat them for dessert. Or if you're like me, you can eat one whenever you feel remotely snacky. No judgement either way. IMG_5555IMG_5558

Classic Blueberry Muffins adapted from here

  • 1/2 cup unsalted butter, melted and cooled slightly

  • 2 eggs

  • 1/2 cup milk

  • 1 cup all-purpose flour

  • 1 cup whole wheat flour

  • 3/4 cup plus 1 tsp sugar, divided

  • 2 teaspoons baking powder

  • 1/2 teaspoon salt

  • 2 cups fresh (or frozen) blueberries

Make It!

  1. Preheat oven to 375°. Line a 12-cup muffin pan with paper liners.

  2. Whisk butter, eggs and milk in a bowl. Combine flour, 3/4 cup sugar, baking powder and salt in another bowl. Stir wet ingredients into dry ingredients; fold in blueberries.

  3. Divide batter evenly among muffin cups; sprinkle with remaining 1 tsp sugar.

  4. Bake for 25 to 30 minutes.
